SICILIAN COUSCOUS
Sicilian cuisine is very varied precisely because it has been influenced by many civilizations that have inhabited this wonderful land over the centuries.
Couscous is a great example of this. Its origins are very ancient; it arrived here during the Arab domination, but instead of the traditional Moroccan recipe made with meat and vegetables, it is replaced by one with the freshest fish just caught in the Mediterranean Sea.
In western Sicily, this dish continues to amaze and delight palates.
